A Recipie: Veggie Wraps


So my mum has recently introduced the idea that once a week my brother and I each have to cook a meal and not just heat up some chips or a frozen pizza - a proper meal. Now I actually quite liked this idea as I would like to get into cooking more healthy foods but to be quite honest, I am a bit lazy so this gave me the incentive to actually get going. I searched the internet for some nice recipes and I found two wrap recipes that looked nice so I decided to mix the two and go with it!  I thought I would share with you my modified meal which was actually really easy ( it took me a lot longer than I thought it would but hopefully I will get quicker the more I cook).

So the ingredients that you will need are :
 - 8 Wraps
 - 2 Sweet Potatoes
 - 2 Red Onions
 - 1 Red Pepper
 - Some Lettice for serving
 - 150ml of Soured Cream
 - 100ml of Mayonnaise
 - White wine vinegar
 - 2 Avocadoes
 - A Chilli
 - 3 Spring Onions
 - Tomatoes, olives etc
 - I used Quorn chunks here as that's what we had in the house but you can use chicken or any other meat that would go well in wraps.

What I love about this recipe is that you can change the ingredients to suit what you like so you can completely customise this to fit you and who your cooking for.

So the first thing you will want to do is preheat the oven to 180degress if you have a fan, 200degress if you don't. Then you will need to peel the sweet potatoes and remove the seeds of the peppers. Cut all the veg into large chunks, placing it into a tray, add some oil and the white wine vinegar. Place in the oven for 40 minutes, make sure to shuffle it all around half way through!

Whilst the veg is cooking, you will want to make the sauces that go with it. The avocado sauce has two mashed avocados, 50ml of the soured cream and the juice from a lime You can also and a chilli as well although I forgot to do this and it was still fine! The second sauce is one that my mum really liked. So you want to mix 100ml of soured cream, 100ml of mayonnaise, 1tsp of white wine vinegar ( this you do need as otherwise, it tastes very dense and not too great!) and then 1 finely chopped chilli.

So to cook my Quorn chunk, I just heated them up with some oil and herbs until they were nice and soft and starting to brown. I then assembled the wraps leaving the sauces in a bowl which people could then add to their wraps as they please. I also had some tomatoes, olives and even some cheese on the side so that people can add what they like.

And that is it! It seems like a lot but each part is so easy to do it doesn't actually take that much though so great if you want to try cooking for the first time or want to have something that you can make quickly with the minimal amount of stress!
